Every Sunday I have the tradition of making fresh carrot and celery juice. While I would like to make this a daily occurrence, I am usually on the run in the morning so this is the best I can do for now. But honestly, I like something to look forward to on Sundays, don’t you? Simply juice a 50/50 ratio of carrots and celery. It usually takes a 1/2 lb of carrots and 2 celery stalk heads to make 1 large glass of juice depending on your type of juicer. My favorite is the Breville Ikon Variable Speed.
A blend of fresh pressed carrots and celery juice is an excellent way to begin introducing juices into the diet. Fortunately, it is also a very sweet juice, so it is excellent for those who are not ready to delve into the world of green juices as well as for the picky eaters such as kids. Celery and carrot juice is highly nutritious, aiding in the alkalinization of the body and is one of my favorite juices for kidney and eye health. Since celery juice is rich in natural sodium it is extremely hydrating, leaving us with a soft and vibrant glow.
* Note: I love suggesting this to be the first juice that children wean onto. I add 1 tsp of unheated sea salt and 1 tsp Colostrum Powder as well to increase its nutritional value.

Carrots are one of the best sources of Vitamin A which is a valuable nutrient for people of all ages. It also contains significant amounts of Vitamin C, Vitamin E, Vitamin K, Potassium and Calcium making it excellent for athletes, kids and pregnant mothers (these nutrients are essential for fetus development).
Celery is an excellent source of vitamins B1, B2, B6 and C and is dense in potassium, folic acid, calcium, magnesium, iron, phosphorus, sodium and essential amino acids.
*It is also important to note that fresh pressed juice is very different than bottled juice. Once a vegetable or fruit has been juiced, it begins to loose its nutritional value. Therefore, it is best to drink it right after it has been made. Furthermore, almost every brand of juice on the market (including organic brands) have added sweeteners and preservatives as well as been pasteurized. Pasteurization ruins the enzymes of the juice and degrade its nutritional value while the added sweeteners and preservatives are harmful to the body. Therefore, take the time and juice it yourself or find a place that offers made to order.
