I know I am not the best food photographer in the world, but simply put this recipe can never look all that glamorous. But…. if I was able to invite you offer to try it, you would agree with me and it would be undeniable… these Vegan and Healthy Animal-Style Fries ROCK.
Even the best of us get a hankering for those certain meals or dishes that you used to LOVE indulging in, but are always faced with our new found conscience of what we are putting in our bodies, and how that is going to affect us. Well, the other day I was passing In-N-Out Burger (for all of you not from California, this is our fast-food relic, that holds in infamy the ability to put out the most delicious fast food possible) and had a crazy craving for animal-style fries.
Animal-style fries are essentially french fries topped with “secret” sauce, caramelized onions and melted cheese, and OMG are they delicious! They are not actually on the menu, much like many other of their customized items, you must be in the “know” to be privy enough to order such an amazing concoction.
So in an attempt to achieve that state of taste-bud rapture once again, without the digestive pain and guilt, I created my own HEALTHY version!!! Fabulous I know. And I know you are all wondering… how in the world can this recipe be vegan and tasty…well that is for you to find out!
THK Vegan and Healthy Animal-Style Fries
3 medium sweet potatoes, washed and sliced into fries
3 tbs coconut oil
1/4 tsp unheated sea salt
For the “Cheesy Mayo”:
2 c raw almonds
1/4 c extra-virgin olive oil
5 tbs lemon juice
1 tbs nutritional yeast
1 tsp unheated sea salt
1/2 c purified water
For the Secret Sauce:
1 tbs ketchup, organic (no high fructose corn syrup)
1 tbs relish, organic (no high fructose corn syrup)
1/2 c “cheesy mayo”
For the Caramelized Onions:
1 tbs coconut oil (if you eat dairy, you can use ghee)
1 medium sweet onion, chopped
Preheat oven to 375°
Toss sweet potato fries in 2 tbs coconut oil and 1/4 tsp salt.
Grease a baking sheet with 1 tbs coconut oil.
Evenly spread out fries on the baking sheet and put in oven.
Cook for 20 minutes and flip the fries to prevent burning.
Cook for another 20 minutes, or until crispy. Take out to cool.
“Cheesy Mayo” Sauce:
Combine all ingredients into a food processor or high-speed blender.
Note: if you are using a high-speed blender, you must have a tamper, like what comes with the vitamix, to mix the ingredients.
Blend until smooth.
Grease a large flat-bottomed sauté pan large enough to fit the onion comfortably.
Heat the pan on medium-high heat, until the oil is shimmering and add onion.
Coat the onion in the oil.
Spread the onions out evenly over the pan and let cook, stirring occasionally. Depending on how strong your stovetop burner is you may need to reduce the heat to medium or medium low to prevent the onions from burning or drying out.
Let cook for about 20 – 3o minutes, or until the onions have caramelized to a nice brown color. Be sure to toss the onions around throughout the process to prevent burning.
The trick is to let them alone enough to brown (if you stir them too often, they won’t brown), but not so long so that they burn.
Secret Sauce (1/2 cup):
Combine 4 tbs of mayo with 1 tbs ketchup and 1 tsp relish and stir until completely mixed up.
This ratio makes 1/2 cup, so make more or less depending on how “saucy” you want your fries.
Fill a plate or bowl with fries, then top with secret sauce and then caramelized onions. Eat with a fork and enjoy!
So there it is, your one-way ticket to true indulgence… The Holy Kale way!
