Hello my Dearest Friends!
It has been such a long time since I have written to you, and I thank you for being patient with me. Life has taken me in so many new directions over the past year, calling my attention elsewhere for the time being. My book The Miracle Kidney Cleanse was published in the beginning of the year, I started to write for The Chalkboard Mag (head over there to get your Lauren fix), have been traveling the world (Japan, Maine and Tasmania in January), and recently got engaged! It has been a wonderful whirlwind, and I have been focusing on moving with the tides of change. While my soul deeply misses sharing with you all, I have come to terms with the fact that sometimes it is better to be directed where the wind blows you, even if it takes you far from where you think you should be. With that being said, you, my loyal Holy Kale readers are my home, and I will always return home. One thing I absolutely must share with you though is my long list of recipes for Thanksgiving. I will be attending two Thanksgivings, one where I am bringing dessert, and the other a vegan entree and side dish. So I have put together a list of all the recipes I am dying to make, all of which are either vegan, vegetarian, paleo or gluten-free. Even though I am unable to cook the whole dinner this year (cannot wait until I can!), I am planning on bringing a couple dishes that I will be happy (and able) to eat. This way, no matter what else is served, I have something healthy to put on my plate. Plus, this is my secret way of giving the gift of health to the ones that I love at my Thanksgiving dinner table. Remember, there are always opportunities to open people’s minds about healthy food, and in this case, it is the simple contribution of a vegan dish to the holiday spread.
